Enchilada Pork Casserole with Spanish Rice
Enchiladas casserole style. Slow cooked pork shoulder and loin mixed with our house made enchilada sauce, salsa, caramelized onion and garlic, and corn layered with corn tortillas and cheddar jack cheese. Garnished with fresh cilantro. Served with a half cup of Spanish Rice.

Vent top and microwave 2-3 minutes until reaching 165ºF or until desired temperature.
(Recommended) Transfer to oven safe dish and heat at 350ºF until 165ºF or until desired temperature
